Slow Cooker BBQ Pulled Pork
Now friends, I have to tell you — this pulled pork recipe saved my sanity more summers than I can count. Back when the kids were little and Danny was playing Little League and Katie had dance recitals on the same Saturday, I'd wrestle that big ol' pork shoulder into the slow cooker before 7 a.m., and by the time we all tumbled back through the door at six, the whole house smelled like a barbecue joint. Hank would walk in, sniff the air, and just grin. That man has always known when something good was waiting for him. 💛
The secret is patience — and a good spice rub the night before, if you can manage it. I've been tweaking this rub since about 1994, and I think I finally landed on the right balance of smoky, sweet, and just a little kick. Pile it on my Soft Homemade Dinner Rolls and you've got yourself a meal that'll have everyone going back for thirds.
Slow Cooker BBQ Pulled Pork
Ingredients
- 4–5 lb bone-in pork shoulder (Boston butt)
- 2 tbsp brown sugar
- 1 tbsp smoked paprika
- 1 tbsp garlic powder
- 1 tsp onion powder
- 1 tsp ground cumin
- 1 tsp kosher salt
- 1 tsp black pepper
- ½ tsp cayenne pepper (use less if the kids are sensitive)
- ½ cup apple cider vinegar
- 1½ cups your favorite barbecue sauce, divided (plus extra for serving)
- 1 medium yellow onion, sliced into rings
Directions
- In a small bowl, stir together the brown sugar, smoked paprika, garlic powder, onion powder, cumin, salt, pepper, and cayenne to make the spice rub.
- Pat the pork shoulder dry with paper towels. Rub the spice mixture all over the meat, pressing it in on every side. If you have time, wrap it in plastic wrap and refrigerate overnight — this makes a real difference.
- Lay the sliced onion rings in the bottom of your slow cooker (at least 6-quart). Set the pork shoulder on top, fat side up.
- Pour the apple cider vinegar and ½ cup of the barbecue sauce around the sides of the meat (not over the top — you don't want to wash off your rub).
- Cover and cook on LOW for 8–10 hours, or until the pork is fall-apart tender and registers at least 195°F in the thickest part. Do not lift the lid during cooking, now — trust me on this.
- Carefully transfer the pork to a large cutting board or rimmed baking sheet. Let it rest for 10 minutes.
- Use two forks (or clean hands — I won't judge) to shred the meat, discarding any large chunks of fat and the bone.
- Skim the fat from the top of the cooking juices in the slow cooker. Stir in the remaining 1 cup of barbecue sauce. Add the shredded pork back in and toss to coat. Taste and adjust seasoning.
- Serve on buns or rolls with extra barbecue sauce on the side, coleslaw, and plenty of napkins!
