Copycat Olive Garden Alfredo
For years — years, friends — the Sullivan family's idea of a special dinner out was Olive Garden. Katie, Danny, and Sam would start asking about it on the drive home from church on Sundays, and Hank and I would look at each other over their little heads and think, well, it wouldn't hurt to go. We'd pile into the booth, and before the menus even landed on the table, all three kids were asking how long until the breadsticks. But Katie — Lord bless that girl — never once looked at anything on that menu except the Fettuccine Alfredo. Every single time. As predictable as a sunrise. She'd swirl those noodles around her fork with this look of pure happiness on her face and I thought: I need to figure out how to make this at home. So I did. Took me a few tries to get that exact creamy, garlicky, Parmesan richness just right, but I got there, and now Katie makes this in her own kitchen for her own kids. Full circle. 💛
The secret to this sauce is real heavy cream, real butter, and genuine Parmigiano-Reggiano grated fresh — not the stuff in the green can, I'm sorry to say. The sauce comes together in about 15 minutes, which means this is genuinely a weeknight dinner. Copycat Olive Garden Alfredo
Ingredients
- 1 lb fettuccine pasta
- 1/2 cup (1 stick) unsalted butter
- 4 cloves garlic, minced (about 1 1/2 teaspoons)
- 2 cups heavy whipping cream
- 1/4 teaspoon white pepper (or black pepper)
- 1/4 teaspoon salt, plus more to taste
- Pinch of nutmeg (just the tiniest pinch — it's the secret)
- 2 cups freshly grated Parmigiano-Reggiano (about 6 oz), plus more for serving
- 2 tablespoons cream cheese, softened (the Olive Garden secret for extra creaminess)
- Fresh parsley, chopped, for garnish
- Reserved pasta water as needed
Directions
- Bring a large pot of generously salted water to a boil. Cook the fettuccine according to package directions until al dente. Before draining, scoop out about 1 cup of starchy pasta water and set it aside. Drain the pasta.
- While the pasta cooks, melt the butter in a large, wide skillet or saucepan over medium heat. Add the minced garlic and cook, stirring, for 1 to 2 minutes until fragrant but not browned.
- Pour in the heavy cream and stir to combine with the garlic butter. Add the white pepper, salt, and that tiny pinch of nutmeg. Bring to a gentle simmer over medium heat, stirring frequently.
- Reduce the heat to medium-low. Add the softened cream cheese in small pieces, whisking until fully melted and incorporated into the sauce.
- Gradually add the grated Parmesan, a handful at a time, whisking constantly and letting each addition melt before adding more. The sauce will thicken as the cheese melts in.
- Let the sauce simmer gently, stirring frequently, for 3 to 5 minutes until it coats the back of a spoon. Taste and adjust salt and pepper.
- Add the drained fettuccine directly to the sauce and toss to coat thoroughly, using tongs or two forks. If the sauce seems too thick, add a splash of the reserved pasta water and toss until silky and smooth.
- Serve immediately in warm bowls, topped with extra Parmesan, a grind of black pepper, and a sprinkle of fresh parsley. Do not let it sit — Alfredo waits for no one!
