Fluffy Buttermilk Pancakes
Saturday mornings in the Sullivan kitchen were β and still are β a sacred thing. When the kids were young, they'd come padding down in their pajamas and park themselves at the kitchen counter, chins in their hands, watching me mix up batter. Danny always wanted chocolate chips in his. Katie wanted blueberries. Sam just wanted a stack as tall as possible, plain and swimming in syrup. I'd stand at that griddle in my bathrobe flipping pancakes for what felt like an hour, and every single Saturday morning, I was happy to do it. This recipe is the one I've been making since before any of those kids were born. π
The secret to truly fluffy pancakes is the buttermilk β the acid reacts with the baking soda and puffs those cakes right up. And the other secret? Do NOT overmix the batter. Fluffy Buttermilk Pancakes
Ingredients
- 2 cups all-purpose flour
- 2 tbsp granulated sugar
- 2 tsp baking powder
- 1 tsp baking soda
- Β½ tsp kosher salt
- 2 cups buttermilk, well shaken
- 2 large eggs, lightly beaten
- 3 tbsp unsalted butter, melted and cooled slightly
- 1 tsp pure vanilla extract
- Butter or neutral oil for the griddle
- Maple syrup, fresh fruit, or whipped butter for serving
Directions
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate medium bowl or large measuring cup, whisk together the buttermilk, eggs, melted butter, and vanilla.
- Pour the wet ingredients into the dry ingredients. Stir gently with a rubber spatula or wooden spoon just until combined β stop when you no longer see dry flour streaks. The batter should be thick and lumpy. Resist the urge to keep stirring!
- Let the batter rest for 5 minutes while you heat your griddle or skillet over medium heat. This rest time lets the buttermilk and leaveners do their work.
- Lightly grease the griddle with butter or a small amount of oil. When a drop of water flicked onto the surface sizzles and bounces, you're ready.
- Pour about ΒΌ cup of batter per pancake onto the griddle, leaving room for spreading. Cook until bubbles form across the surface and the edges look set and dry, about 2β3 minutes.
- Flip once and cook for another 1β2 minutes, until the underside is golden brown. Resist the urge to press down on the pancakes β let them stay fluffy!
- Transfer to a plate and keep warm in a 200Β°F oven while you finish the batch. Serve with plenty of real maple syrup and soft butter.
Now here's the thing β once you make pancakes from scratch, the box mix just won't do it for you anymore. I'm sorry to tell you that. These are just that much better. Hank walks through the door on Saturday mornings now and goes straight to the kitchen to see if I'm making a batch, same as he has for going on thirty years. Some things, friends, never get old. π
